Did you know that 40% of the food produced in the U.S. every year is wasted? With all that food, we could feed the entire American hungry population three times over. In the preview episode of Mic’s new show Model Citizens, Scott Bixby met Robert Lee, the man who started a New York nonprofit called Rescuing Leftover Cuisine. Lee grew up in a food-insecure household, an experience he shares with 49 million people in the U.S. Now he partners with restaurants to repurpose their perfectly edible and delicious food waste for homeless shelters and food pantries — in other words, he’s saving the world with your leftovers.
